Cutting Boards

Boards that are sanded flat and re-oiled rather than thrown out, in wood hard enough to resist a knife and soft enough not to blunt one.

A cutting board is the only thing in a kitchen that gets better at its job through being repaired. A plastic one collects knife scores that hold bacteria and cannot be undone; a wooden one is sanded back to flat with an afternoon and a sheet of paper, and comes out looking new. What decides whether that is worth doing is the wood: hard enough that a blade does not plough it, soft enough that it does not blunt the blade, and thick enough that taking a millimetre off makes no difference.
